Recipe: Oaty Apple Crumble

Come midwinter, many might experience a deep longing to tuck into something warm and cinnamon-spiced under a streusel topping. Apple crumble is the answer to our most ardent wishes to dispel the winter blues. Plus, an apple a day is never a bad idea: Why not make it apple crumble?

I’ve adapted Jeanine Donofrio’s recipe, which amps up the nutty flavor with almond flour, and I follow her lead. Coconut oil is my preference for the fat, but some bakers prefer a buttery crumble. I simply find that the tart apple flavor shines more with a neutral oil.

I love to smother my crumble with a blizzard of streusel crumbs. Meanwhile, the underlayer is a snuggle of soft, spiced apples that are baked till they burble and gurgle and fill the kitchen with delicious aromas. Apples are at the heart of this recipe. So, pick your favorite. Then, peel and dice, or slice them instead and leave the skin on for a pop of color. Soon, you’ll bask in a blissful reverie of sugar and spice.

Ingredients

Spiced Apple Filling

  • 1 pound (about 5) apples, peeled and diced to make 1-inch pieces
  • 1 teaspoon lemon juice (optional)
  • 2 tablespoons water
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Topping

  • 1/2 cup almond flour
  • 1/3 cup all-purpose flour
  • 1/3 cup whole rolled oats
  • 1/2 cup toasted pecans, chopped
  • 1/2–1/3 cup brown sugar or coconut sugar
  • 1/3 cup melted coconut oil or butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt (generous)
  • 1 teaspoon water, if necessary

Method

Step 1

Preheat the oven to 400 F and grease an 8×8-inch baking dish.

Step 2

For the filling: Combine the apples and liquids in a saucepan and simmer, covered, over low heat, stirring occasionally (make sure not to burn) for about 15 minutes or until tender. Add spices and salt and stir. The liquid should be thick.

Step 3

For the topping: In a food processor, pulse the topping ingredients until crumbly. Add the water if needed to form clumps.

Step 4

First, scoop the apples and then scatter the topping into the baking dish. Bake for 18–20 minutes or until golden brown and lightly crisp.

Serve your crumble right out of the oven with a simple scoop of vanilla ice cream. It’s a joyful end to a meal, if not to winter.
