Recipe: Texas French Toast

There’s a reason French toast is a breakfast favorite. It’s hands-on in the best way: Dip thick slices of bread into a rich custard, let them soak, then lay them on a hot, buttered griddle until they turn golden and smell downright irresistible. What you get is the perfect mix of crispy edges, a soft center, and warm notes of cinnamon and vanilla.

Some folks from other parts of the country might believe bread such as brioche or challah elevates French toast. But in the Lone Star State, we know that Texas toast gets the job done just right.

It all comes down to the cut. Texas toast — sliced thick to about 3/4 of an inch — soaks up plenty of custard without falling apart. The result is a creamy center with a sturdy, caramelized outside. For the custard, using whole milk or even a splash of heavy cream makes a richer mixture and helps keep the toast from turning soggy.

From there, make it your own. Keep it classic with a drizzle of maple syrup and scattering of fresh berries, or add toasted pecans and a dusting of powdered sugar. If you’re in the mood for something a little indulgent, try a bananas Foster–style topping with caramelized fruit and brown sugar.

Want to switch things up? Slice the bread into batons for French toast sticks (a hit with kids) or turn it into an overnight bake by layering the soaked bread slices in a dish, refrigerating, and popping it in the oven the next morning.

Ingredients

  • 6 slices Texas toast (fresh, not frozen)
  • 3 eggs
  • 2/3 cup whole milk
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon sugar (if desired)
  • 1/2 teaspoon salt
  • Butter as needed

Method

Step 1

Beat or whisk all ingredients (except bread) in a large baking dish until thoroughly blended.

Step

Place bread slices in the mixture. Turn to coat. Cover and chill until bread absorbs mixture, at least 30 minutes or overnight.

Step 3

Melt butter in a heavy skillet or heat griddle over medium heat. Place soaked bread slices on a skillet or griddle. Cook until golden and cooked through, about 3 minutes per side.

Step 4

Transfer to plates and serve warm with desired toppings.
