Recipe: Winter Grilled Kabobs

Pile on whole mushrooms, red onions, winter squash, and pineapple for a festive, colorful meal.

Brave the chill and fire up your outdoor grill for this meal of charred wintry perfection.

Mix & Match

Start with cubed tenderloin or sirloin steaks and go wild with combinations of the following cold-weather bounty.

  • Red onions, peeled and quartered
  • Button mushrooms, whole
  • Bell peppers and cherry tomatoes
  • Pineapple chunks
  • Winter squash, parboiled
  • Halloumi, paneer, or feta

Spicy Dry Rub

Keep a batch in the pantry to coat your meat before throwing skewers on the grill.

  • ½ cup soft dark brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 2 teaspoons dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Sweet & Sour Marinade

Tenderize tougher cuts with this Asian-inspired marinade. Simply combine ingredients in a sealed bag with your cubed meat and marinate for at least an hour and up to overnight.

  • ½ cup Worcestershire sauce
  • ½ cup soy sauce
  • ½ cup lime juice
  • ½ cup light olive oil
  • 1 tablespoon mustard
  • 4 cloves garlic, smashed or chopped
  • 1 tablespoon honey
  • Salt and pepper to taste
