A Texas take on a comforting classic.

What makes a chicken potpie so satisfying? Is it the steam it releases when you first cut into the golden, flaky crust? Is it the delight of spooning up the first bite, when hunks of tender meat and fragrant sauce mingle? As a one-dish meal, a chicken potpie is a singular feat, effortlessly uniting delicious elements under a buttery blanket. In the Lone Star State, a Tex-Mex version is hard to top.
We love this cozy rendition that marries peppers (poblano, chipotle, jalapeño) in a creamy, smoky filling with corn, black beans, and rotisserie chicken. Pepper jack baked into the crust adds a rich, gently spicy finish. Make individual pies, or bring one big skillet to the table and let everyone dig in. Either way, this is the kind of comfort food that lingers in the memory: familiar at first bite, with a southwestern spark underneath.
Makes 1 large potpie


Preheat oven to 400 F. Meanwhile, heat olive oil in a large, ovenproof skillet over medium-high heat.
Add the peppers, corn, onion, and bell peppers. Season with a pinch of salt and pepper. Sauté for 5 minutes or until tender-crisp.
Sprinkle flour over vegetables and stir until the flour has coated them, 1–2 minutes. Stirring constantly, slowly add the chicken broth.
Stir in cream, black beans, cilantro, and chipotle peppers. Add spices as desired after tasting. Allow the sauce to come to a simmer and thicken, 2–3 minutes. Remove from heat, then taste and adjust seasoning. Add chicken and stir.
Roll out pie crust on a lightly floured surface to an 11-inch circle, large enough to hang over the skillet. Carefully lay the crust over the skillet, pressing gently into the sides to seal.
Brush the top with the beaten egg and sprinkle with pepper jack cheese. Cut 2–3 small slits in the top and bake until the crust is golden, about 30 minutes.
Cool slightly before serving (about 10 minutes). For individual servings, divide among 6 ramekins and top with circles cut from the pie crust.
