Everyone Scream for Ice Cream S’mores

Indulging in childlike glee could take the form of running through sprinklers, competing in field day garden games, or, more simply, savoring a sweet treat after a day spent in the sun. Discover ice cream s’mores — the summer version of the traditional campfire dessert.

Ingredients

  • Graham crackers (original, honey, or cinnamon-dusted)
  • Mini marshmallows or marshmallow fluff
  • Ice cream (vanilla, chocolate, salted caramel, etc.)
  • Melted chocolate (milk, dark, or white)
  • Optional toppings: toasted almonds, cacao nibs, sprinkles, brownie bites, etc.

Method

1. Choose graham crackers you enjoy, whether original, honey, or cinnamon-dusted. Break each in half so it forms two squares. Lay them on a baking sheet.

2. What would an ice cream s’more be without its pillowy counterpart? A simple way to incorporate the marshmallow element is with a dollop of Marshmallow Fluff. If you love the toasted marshmallow taste, place a few mini marshmallows on the base graham crackers, set them under the broiler until caramelized, and then let them cool before adding the ice cream.

3. Next, choose your ice cream flavor. Stick with vanilla bean or go delightfully off script. Pair your graham crackers with scoops of chocolate or salted caramel for a super-decadent treat. Scoop the ice cream onto half of the graham crackers, add the remaining graham crackers to “close” the s’mores, and place in the freezer for 20 minutes.

4. Melt your chocolate of choice in a microwave-safe bowl, and dip half your s’more into it.

5. While the chocolate layer is still warm, roll your s’more in chopped roasted almonds, cacao nibs, brownie bites, or sprinkles. Then, place the ice cream s’mores in the freezer for another 20 minutes or until the chocolate has set. Enjoy by the pool or after a hot day in the sun.
