No vegetable offers freshness like cucumbers do. They’re bright, crispy, and taste great in a number of recipes. This garden staple lightens up and adds a crunchy element to any meal. We’re sharing three of the most delicious cucumber recipes that are sure to wow.

Cucumber-Onion Zoodle Salad

This zoodle salad is a twist on a Southern classic and can be made in large quantities. It will be a hit at any gathering and is a great, light compliment to heavier dishes.

5 medium cucumbers
3 medium onions
1/5 cup olive oil
2 cups rice vinegar
2 teaspoons dill
Salt and pepper

Process five medium cucumbers into zoodles with a spiralizer. You can also cut them into coins, but the zoodles make a fun twist. Thinly slice the onions into long strips. Coat them in the olive oil, rice vinegar, dill, and salt and pepper to taste. Stir to coat. Marinate in the fridge for a few hours and serve chilled.

Kathy’s Cold Cucumber-Avocado Soup

This basil-y gazpacho tastes fancy but is incredibly simple to make. It is great as a starter or a light lunch. Kathy is my mom.

1 avocado
1 cucumber, seeds removed
2 handfuls basil
2 garlic cloves
2 scallions
2 cups water or vegetable stock
1 ½ teaspoons sea salt
Juice and zest of one lime

Set aside a quarter of the avocado and chop. Throw all remaining ingredients into the blender and blend until smooth. Serve cold. Garnish with avocado slices, chopped basil, or even cold shrimp, and a spoonful of plain yogurt if desired.

Cucumber Canape Selection

Looking for a finger food that’s easily thrown together? Replace your bread and cracker options with cucumber rounds to add a crunchy kick. These look elegant and take only a few minutes to prep. Start with three medium cucumbers (peeled) as your base and choose your toppings.

Salmon and Cream Cheese
1 small package smoked salmon, chopped into small pieces
5 tablespoons regular cream cheese

Hummus and Pesto
1/2 cup plain hummus
4 tablespoons red pesto
Crumbled goat cheese or feta

Ham and Cheese
4 slices deli ham, cut into small circles
5 slices cheddar, cut into small circles
2 tablespoons each mayo and mustard, mixed

Cut the cucumbers into coins and lay them flat. Artfully assemble the canape ingredients on top, going from wet to dry ingredients, and serve immediately.
