Not Your Grandma’s Pecan Pie Recipes
Pecan pie, especially in the South, is a holiday table staple. It wouldn’t be a proper dessert table without this gooey treat. Maybe your grandmother’s pecan pie recipe is the guest of honor at family gatherings — but with a few small tweaks you can put a whole new spin on this Texas classic. We’ve assembled a few ideas here to add some creativity to your pecan pie recipes.
Cayenne Vanilla Pecan Pie
Don’t let the cayenne pepper scare you — it adds a spicy twist that’s enjoyable for anyone with a sweet tooth and a thrill for adventure.
Ingredients:
For the crust:
1 ½ cups all-purpose flour
¾ teaspoon salt
7 tablespoons unsalted butter, chilled
3 to 4 tablespoons cold water
For the filling:
5 tablespoons unsalted butter
1 cup packed dark brown sugar
¾ cup light corn syrup
½ teaspoon salt
2 cups chopped pecans, toasted
2 tablespoons almond extract
1 teaspoon cinnamon
4 teaspoons pure vanilla extract
¼ cup black coffee
3 eggs, lightly beaten
¼ teaspoon cayenne
Method:
Make a traditional pie crust, combining flour and salt and cutting in cold butter until reaching breadcrumb consistency. Add water slowly. Roll out crust between two sheets of waxed paper. In a saucepan, melt butter and add sugar, corn syrup, and salt. Bring to boil. Remove from heat and stir in remaining ingredients. Allow to cool for a few minutes. Pour into pie shell and bake at 350 F for 45 minutes.
Mrs. Truman’s Ozark Pudding
Beloved by President Harry Truman, the recipe for this old-school dish was sent out by the White House Correspondence Office to any American who requested it. It has been passed around since the 1950s and is in its best form when made with pecans. For a true pecan pie, add the mixture as a filling to a pie crust before baking.
Ingredients:
½ cup flour
1 ¼ teaspoons baking powder
¼ teaspoon salt
1 egg
¾ cup sugar
2 teaspoons vanilla
½ cup pecans
½ cup apples, peeled and chopped
Method:
Preheat oven to 350 F. In a bowl, mix sugar, eggs, and vanilla until creamy, then add dry ingredients. Finally, add pecans and apples. Pour into greased pie pan and bake for 30-35 minutes.
Lazy Man Pecan Pie
This easy-bake take on the Texas classic uses a crockpot slow-cooker to achieve those caramel pecan flavors. It’s the pecan pie recipe of choice for any busy Texan chef.
Ingredients:
1 pie crust
3 eggs
1 ½ teaspoon vanilla
1 cup brown sugar
2/3 cup light corn syrup
5 tablespoons butter, melted
½ teaspoon salt
1 ½ cups pecans, roughly chopped
Method:
Spray or grease the inside of the crockpot and place pie crust inside around the base. Mix all ingredients until smooth. Pour mixture into crust, cover, and bake on high for three hours.
