Red Velvet Surprise Cupcakes

February 14 is just around the corner!

Make your sweetheart swoon this Valentine’s Day with these homemade Red Velvet Surprise Cupcakes, a decadent red velvet cupcake, filled with chocolate chip cheesecake and topped with cream cheese frosting.


Here’s what you’ll need for the cheesecake filling:
1 box Jell-O No Bake Cheesecake
1 ½ cups milk
Mini Chocolate Chips

Here’s what you’ll need for the cupcakes:
1 box red velvet cupcake mix
2 large eggs
2/3 cups water
¼ vegetable oil
Cupcake liners/cups
Two large mixing bowls
1 can cream cheese frosting

To get started, begin by making your cheesecake filling. You’ll take the No Bake filling pouch out of the box and mix it with the recommended amount of milk (for the “Real Cheesecake” flavor, it’s 1 ½ cup). Mix until firm, and then add in your mini chocolate chips. Finally, put the chocolate chip cheesecake filling in the fridge to let it set.

Preheat your oven according to your cupcake box directions.

In a separate mixing bowl, begin making your red velvet cupcakes. I used the Duncan Hines Decadent Red Velvet Cupcake mix with cream cheese frosting. Add recommended ingredients (two large eggs, 2/3 cup water, ¼ cup oil) and mix until smooth.

Line your muffin pan with cupcake liners, then scoop filling into your cupcake liners, filling the liner about one third of the way full. Once all 12 are full one third of the way, grab your cheesecake filling from the refrigerator and scoop a large scoop (about a tablespoon) of cheesecake filling into the center of each cupcake liner.

Finally, using the last of the cupcake mix, fill the cupcake liners the remainder of the way, completely covering the cheesecake in each liner. Bake according to the box directions (350 degrees Fahrenheit for 20 to 25 minutes).

When checking to see if your cupcakes are fully cooked, take a toothpick and insert into the center of one cupcake. Since the cheesecake filling will be gooey, check to see if any red velvet cake mix from the bottom of the cupcake liner comes out on the toothpick. If you just see cheesecake mix, the cupcakes are ready to be taken out of the oven.

Once cool, top cupcakes with cream cheese frosting and enjoy!
