Decadent Blueberry Pie Recipe

Soon, blueberries will be popping up across Texas and begging to be baked, preserved, and sprinkled over our plates. This luxurious French-influenced blueberry pie will quickly become a family favorite. The hint of almond in the crust and a delicate custard filling elevate this bake to a truly special occasion.

Ingredients

For the pastry:
1 ½ cups all-purpose flour
cup ground almonds
1 tablespoon granulated sugar
½ teaspoon salt
1 stick unsalted butter, cut into small cubes and chilled
1 large egg yolk
1–2 tablespoons ice water

For the filling:
3 large egg yolks
½ cup granulated sugar
2 cups heavy cream
1 cup sour cream
1/4 teaspoon vanilla bean paste
Zest of 1 lemon
1 basket of blueberries, plus extra for serving
Whipped cream (optional)

Method

Preheat the oven to 375 F. Combine flour, ground almonds, sugar, and salt in a large bowl. Add the butter and pulse in a food processor to mix or rub in with your fingers until the mixture resembles coarse meal.

Add the egg yolk and 1 tablespoon of ice water, mixing until it just comes together. Add up to 1 more tablespoon of ice water if the mixture is too dry. Shape the pastry into a flat disk, then cover and chill for at least half an hour, or until firm.

Lightly flour a surface and roll out the pastry to 1-inch thickness and place in your pie pan. Line with parchment paper and weigh down with dried beans, then blind-bake in the oven for 18 to 20 minutes, until lightly browned.

Make your filling. Cream egg yolks and sugar until light and fluffy. Meanwhile, heat heavy cream and sour cream in a pan and bring to a scalding point. Mix in the vanilla bean paste and lemon zest. Remove from the heat and leave to cool slightly before adding the mixture slowly to the egg yolks and sugar, stirring constantly.

Take your pastry crust out of the oven and allow it to cool slightly, then line with a single layer of blueberries and pour over the custard. Bake for 30 minutes, or until the custard is set and lightly golden. Serve chilled with whipped cream and fresh blueberries.

Now you just need some homemade ice cream to top it off.
