Balsamic Watermelon and Feta Salad
Bring on the spring with this sweet and tangy salad featuring some of our favorite warm-weather fruit.
INGREDIENTS
- 1/2 large watermelon
- 1 ‚ÅÑ 2 cup fresh mint leaves
- 1 1/2 cups crumbled feta cheese
- balsamic vinegar
DIRECTIONS
- Using a melon baller, scoop the inside of the watermelon half into uniform spheres.
- Finely chop 1/2 cup of mint leaves.
- Combine crumbled feta cheese and fresh mint leaves in a large serving bowl.
- Combine watermelon and feta cheese/mint mixture, top with balsamic vinegar to taste, and shake thoroughly.
